I was diagnosed Celiac in November.I tried the gluten free products out there and was really disappointed with the taste and how highly processed some of it is so I decided to try Paleo.I have lost 30 pounds so far and feel better than I ever have.
The weight came off pretty rapidly, about 2 pounds a week until my weight reached the mid 150s. In the past several months it is pretty stable — it doesn’t shift a lot whether I exercise or not. In any case, those struggling with weight should forget about other diets that leave them starving and always lead back to the weight returning. This is the way to go.
And yeah, counting calories–actually monitoring everything you can about what you’re putting into your body and how your body responds–is a *really* good idea! (But psst! “fewer” calories. 😉 They are notoriuosly counted, after all.)

I’m not on the paleo diet but you may benefit by taking CLA. I would bet you will gain the muscle and body definition back with it. If it is working, you will gain weight in the beginning. Don’t mistake that gained weight for fat increase.

2) fiber – are veggies rough enough? in the past i’ve had great success improving my health and weightloss when i remember to eat half a can of beans every day. it is my understanding we need resistant starch and that new evidence has shown our bodies react to it by producing the fatty acid butyrate, which affects us into fat burning instead of sugar burning. might a very low carb paleo diet not be as good for weightloss as it could be? beans, corn, and cold potatoes/rice/pasta (cooked then cooled down – think paleo version potato and rice salads) are good sources of resistant starch. seems like resistant starch also increases the absorption of calcium and prevents constipation. perhaps the weightloss paleo plan will work better for me and others with the inclusion of some foods like beans, corn or cold potatoes/rice/pasta.
I think its important, especially when a person is on a low-carb, paleo or primal diet to consider your fat intake in relation to your daily energy needs. Both paleo and primal encourage an increased intake of fats over the “standard north American diet”. I agree with most people that fats are healthy and should be consumed in fairly hefty doses compared to traditional thinking, but we still need to make sure we are consuming less fat as an energy source than we are burning (for weight loss purposes). Its all fine dandy to be in a fat burning, ketogenic state, but if you are consuming enough calories via fat to meet your daily needs, your body has no reason to dig into the stored energy reserves.
Your body can suffer if you do not exercise. Losing weight without exercising can be beneficial only temporarily, if you turn to diet pills, rigorous dieting, crash diets, etc. for weight loss, these methods can lead to many unhealthy side effects.
I was diagnosed with RA as well at age 32. We just lost a full term pregnancy as well due to a complication of identical twins and I don’t want to go on meds due to the toxicity to the body for when we start trying to conceive. I was in a horrible flare right after pregnancy and now (3.5 months later) with all the diet modifications I am doing much better. Still very stiff in the morning and after sitting. But actually just start as well and have seen results. I am making bone broth as well. Dr Mercola speaks of great benefits for RA. This is really a life overhaul going gluten, grain, dairy and soy free. I am walking though so that is improvement!
