Since going Paleo 15 months, I’ve healed my insides quite a bit in the form of no more sinus infections, nor toe fungus. However, I’ve put on 9-11 pounds of FAT. So, my insides are healed but my outsides are not happy! Could I be ingesting too many calories via healthy fats? Here’s a typical day of eating:

*Googling:* The GI of my favourite toast is 36 , so I’m happy to stick with that and use it with the verrrry handy breakfast protein recommendation (I’m so not into breakfast cereals – well actually, I’m good with ACTUAL rice or corn for breakfast), and go for beans on toast, or tofu-miso-vege soup for brekkie.

The 3rd is ENERGY and we in our modern medicine (food strategizing) DO A HUGE DISSERVICE by insisting that the only kind of ENERGY is heat measured in joules. Silly me, ‘insisting’ is such a poor word-choice. We ignore most of ‘humanities’ diet strategies because the experiments done were often not circadian and seasonal (because Californian weather is non-drastic/non-seasonal).
To make a chicken salad, toss 4 ounces shredded skinless roast chicken breast with 1/4 cup sliced red grapes, 1 tablespoon slivered almonds, 1 tablespoon light mayonnaise, and 1 tablespoon fat-free sour cream. Serve over lettuce. Eat with 1 banana.
The problem is that to lose body fat, we need to be in what’s called a “calorie deficit” for an extended period of time. This means that the number of calories entering our body (i.e. what we eat and drink) have to be lower than the calories being used by our body (i.e. general metabolism and physical activity).
I am gaining weight even though I am trying very hard to adapt to paleo. What am I doing wrong? A typical daily menu is 1 tablespoon psyllium husks with 1 tbsp coconut oil, coffee with 2 tbsp cream, 1/2 cup coconut cream with 1 tbsp chia seeds, tea with 2 tbsp coconut cream, 8 almonds, 1 date, 110g ham, 1 piece fruit, 200g salmon, 1/2 cup beans, 1/2 cup cauliflower all with butter, 1/2 cup milk kefir with 1/2 tbsp flaxseed oil, 1/4 cup coconut milk with 1/4 cup milk with cinnamon and nutmeg, 4 glasses of water. Are you eating enough volume of food during breakfast? I eat breakfast at around 8:00 AM – lentils, mixed veggies, spinach and a protein supplement (pea protein) and sometimes I don’t feel hungry till late in the afternoon or early evening if I have to miss lunch…
This diet is very clearly an unsustainable fad diet but is not as nutritionally unsound as similar diets. Most of these diets claim some magical fat-burning science is involved, or that there is something special about the combination of foods. This is simply untrue – it is nothing more complex than a reduction in calories!

And this leads to the problem of the body fat set point. Everyone’s body has a natural set point for body fat that it “wants” to maintain within a few pounds. If you can stick with calorie restriction long enough to go too far below this set point, your body fights back, using a combination of calorie math and nutrient partitioning. It decreases energy expenditure on everything non-essential (especially fertility: this is why so many women lose their periods if they become dangerously underweight), and makes you starving hungry all the time in a last-ditch effort to get more food. Any extra energy is immediately stored as fat, rather than burned for energy, because as far as the body is concerned, you’re in the middle of a life-threatening famine.
