I tell this to everyone because everyone (me included) have done the same thing, trying to cut corners and make it easier. You’ve added different ingredients (mushrooms, cauliflower, Braggs seasoning and stir fried it all). And didn’t eat your needed baked potato. Everything in this diet has a purpose and each day ingredients has a purpose as well. I can’t say that what you’ve done is without a doubt wrong, but what I can say is, every time that I’ve done this diet (first few times) and swayed away from the original recipe and day plan, I got screwed.

You also have to do your best to move your body more. That can mean taking the stairs instead of the elevator or even working extra hard at physical therapy. Do as much as you can, follow the other 3 steps and you will see the weight melt off.
I disagree that the diet “revolves around red meat and little else.” I’ve been eating Paleo for the last year and a half. There’s this misconception that all we eat is meat. Do my daily meals revolve around animal protein? Yes, but I’m generally eating about 4 or 5 ounces per meal. The bulk of my meals comes from all kinds of fruits & vegetables. I have a salad with my lunch and dinner. I have some sort of vegetable at each meal, including a starchy veg at least once a day (sweet potato, butternut squash). You have a ridiculous number of choices for veg (cooked broccoli, cauliflower, Brussels sprout; all sorts of leafy greens, summer squashes, etc.). Every meal includes forms of fat: butter, ghee, coconut oil, olive oil, nuts, and seeds. And then there’s fruit. And while some say Paleo is expensive because of the cost of organics and pastured raised animal protein, I do what I can do. If I can’t afford organic, then I don’t buy organic. It’s still a better choice than sugar laden, processed garbage that destroys my gut health. You have to make the best choices you can, and for me, an autoimmune former vegetarian, I have found Paleo to be a godsend. I’m healthier now than I was being a vegetarian. My allergies have subsided, my waistline has shrunk, my inflammation is under control, my cholesterol has dropped, and I haven’t had a cold, sore throat or the flu since I started eating this way. And I teach at a public school! I averaged 2-3 illnesses a year prior to Paleo. So don’t buy into the misconceptions out there about Paleo. Do the research yourself & make the best decision for YOU. Everyone is different. We have to remember that a one-size-fits all approach doesn’t work.
Cutting back on your caloric intake is how you lose weight. I don’t waste my time working out at a gym 2 hours a day. I do moderate exercise mainly to get my cardio vascular system healthy as Im losing.
Just to give you bit of an idea about how much that is, consider this: a 160 pound person burns about 1,000 calories playing competitive soccer for 90 minutes. That means you’d need to play competitive soccer for 7.5 hours during the day to burn 5,000 calories.

I ate slow-carbs for 3 months and lost 30 pounds. I went back to a less-restricted diet (a few slices of toast, some potatoes and rice) and didn’t gain back a pound. Normally, those who gain back pounds are those who go back to the Standard American Diet way of eating — 300g of refined carbohydrates, candy bars, pop, sandwiches and fries galore — that will surely cause you, and anyone else in the world, to gain weight. Eat sensibly, incorporate lower-carbohydrate foods sparingly, as this is much better for your health, and exercise. You shouldn’t have any weight problem after that!
Also which day is best to do this on? Considering that I am guessing the Saturday when you eat what you want would tend to be an above average day for calories compared to the other days when you are restricting your diet to low-GI and high protein.
Modern man faces many chronic diseases that didn’t plague them in prehistoric days, so hypothetically, eating the same way should improve your health. Time magazine reports that most nutritional experts think it’s a gross oversimplification:
